Our Vintage Beef draws inspiration from the world-renowned beef of Galicia in Northern Spain. Cattle mature slowly on lush pastures to at least six or seven years of age, resulting in supremely flavoursome meat.

“Vaca Vieja” (literal translation, ‘Old Cow’) is celebrated as some of the finest beef in the world, featured on the menus of top restaurants and steakhouses. A true heritage of exceptional beef.

We work with a number of farms, breeding beef from the Heritage breeds that are the cornerstones of New Zealand’s farming history.

The Angus and Hereford are well known, but we also include breeds such as the Galloway and even the magnificent Highland in our programme. We use our farmers’ surplus cows, which have been retired from their breeding programmes and now graze lush multi-species pastures through to processing.

This approach allows us to benefit from exceptional beef genetics, quiet temperament cattle, and most importantly cattle with maturity and AGE.

You know as well as we do that AGE MEANS FLAVOUR. Our Heritage breed cattle are raised to 6-9 years old in partnership with our regenerative farming partners.

The result? A truly exceptional product, with a unique story and authentic provenance, distinct from anything else on the market.

Defying fast farming for unmatched flavour

We are winding back the clock, to a style of farming and meat production once common here in New Zealand, and still regular practice in the European regions that have inspired us.

Modern commercial farming production methods dictate that animals are grown as fast as possible, enter the food chain at around twenty four months. It is within the memory of older farmers here, that cattle weren’t ‘grown out’ until they were at least four years old, it is solely commerciality that has seen fast maturing farming practice develop. That is at the cost of FLAVOUR! We are not revolutionising farming, we are returning to how things could be done!

We know that AGE MEANS FLAVOUR, and our cattle are raised in partnership with our Hawke's Bay Regenerative and Organic farming friends who target a low stress, minimum input approach. Not only are we proud to offer to you an exceptional product, but an exceptional story with genuine provenance to match!
